A variety trial with salads of interest for the fresh-cut industry was conducted in the Avellino province in the year 2013 with eight cultivars of radicchio, four of cichory, ten of escarole endive and seven of curly endive. This sample of cultivars showed a positive correlation between yield and quality. The best quality was due to percent marketable, color and dry matter for radicchio; to color, dry matter and absence of margina burn for cichory; to dry matter,uniformity, low marginal burn, reduced axis, marketable percentage and color for endives. The best performers were: radicchios Leonardo, 5010 F1and P.Rossa2; cichory Uranus; endive escaroles Sikuris and ES 11240; curly endive Karibe.
